How we bake our lapis legit

We spread and cook each thin layer before adding the next, watching the colour and surface as the cake develops.

Spread a measured layer

A thin layer of batter is spread evenly across the cake. Keeping the layer even helps the finished cut face look consistent from one side to the other.

Cook before adding more

Each layer is cooked before the next one is added. This is what creates separate bands rather than one continuous crumb.

Watch the surface

Colour and surface condition guide the timing. The work is repeated layer by layer until the cake reaches its finished height.

Check the finished cut face

Once cut, the cake should show clear repeated bands and a fine, dense texture. Original, Prune and 3-in-1 use the same layered method with different flavour additions.
